Peach Bread Recipe {Easy Quick Bread}

It's peach season and I hate to waste food, especially fruit.  So when I was gifted some peaches, I had to find something to do with them and found this recipe out on Tastes of Lizzy T

It was pretty easy to make and delicious.  But let's be honest, heavy cream is never optional.  Go for the gold and use it!

Ingredients:
For the Bread:
3/4 cup granulated sugar 150 grams
1/2 cup 2% milk 4 ounces
1/2 cup canola oil (vegetable or coconut oil)
1 large egg
1 teaspoon vanilla extract
2 cups all-purpose flour 260 grams
2 teaspoons baking powder
1/4 teaspoon salt

cups diced fresh peaches

For the Glaze:
2 cups powdered sugar
2 tablespoons melted butter
1/3 cup finely diced peaches (peeled and drained of any extra juice)
1/2 teaspoon vanilla extract
1-2 tablespoons heavy cream or milk** (optional)

Directions:

  1. Preheat the oven to 350ºF. In a medium bowl, stir together the sugar, milk, oil, egg and vanilla.
  2. In a separate bowl, combine the flour, baking powder and salt. Add the dry ingredients to the wet ingredients and stir until just combined.

  3. Fold the peaches gently into the batter.

  4. Pour the bread batter into a greased 9"x5" bread pan. Bake at 350ºF for 55-60 minutes. A toothpick inserted in the center of the bread should come out clean. Allow the bread to cool for 10 minutes, then remove the bread to a wire rack to cool completely. 
  5. To make the glaze, combine the powdered sugar, melted butter, diced peaches and extract in a small bowl. Mix until it is smooth. Add heavy cream only if needed to get the glaze to a drizzle consistency. 
  6. Once the bread is cool, spread the glaze on top of the bread. Slice and serve.
     
  7. Store the bread in an airtight container in the refrigerator.
