Dutch Apple Pie
This may be one of my best finds in recent months. It's a Dutch Apple Pie that is not only delicious but super easy to make and a crowd pleaser. I made it over the Thanksgiving holiday and had to make two in two days because the first one was devoured before my apple-loving sister was able to get a piece. And it's no surprise that it's delicious. It's a Six Sister's Stuff recipe.
Ingredients:
2 cups all-purpose flour
1 cup light brown sugar, packed
3/4 cup butter, melted
1/2 cup oats (I used quick oats)
Filling:
2/3 cup white sugar
3 Tbsp. cornstarch
1 1/4 cups cold water
3 cups apples, diced and peeled (I use Granny Smith or Golden Delicious apples)
1 1/2 tsp. vanilla extract
Directions:
1. Preheat oven to 350 degrees.
2. In a large mixing bowl, combine flour, brown sugar, butter, and oats. Measure out 1 cup of the mixture and set aside for later, pressing remaining crumb mixture into a 9" ungreased pie pan. Set aside.
3. In a large saucepan over medium high heat, mix together the sugar, cornstarch and water until smooth. Bring to a boil and let boil for 2 minutes (or until mixture is thickened), stirring the entire time. Remove saucepan from heat and stir in the diced apples and vanilla.
4. Dump covered apples into the pie pan and top with the 1 cup of reserved crumb mixture. Place in oven and cook for 40-45 minutes (the crust will be a golden brown when it's done). Let cool before serving.
