Patsy's Darn Cake
My mother-in-law made a really good cake and one, in particular, was her claim to fame. She called it Damn Cake because every time she made it she lamented doing so because she couldn't stop eating it. Everyone shared in the sentiment I assure you.
My husband has asked me to make this cake on several occasions. Most recently was this week as we celebrated her 70th birthday without her (she's been gone for 8 years now). And every time he asks, I have to hunt down a family member that might just have the recipe tucked away somewhere. I vow no more! I am writing it down so that I have it from here on out.
Ingredients:
1 German Chocolate cake mix
14 oz. caramels
6 oz. chocolate chips
1/3 c. milk
1/2 c. butter
Nuts (optional)
Directions:
Make the chocolate cake mix according to the directions on the box.
Pour 1/2 of cake batter into a 9x13 pan and bake it at 350 degrees for 15 minutes.
While cake is baking, mix caramels, milk, and butter in bowl in microwave or on stovetop. Watch carefully so it doesn't overcook and/or burn.
Remove cake from oven and spread caramel mixture over cake. Top with chocolate chips and nuts. Pour remaining 1/2 of cake batter on top and bake for an additional 30 minutes. Let cool.
