Chocolate Pudding Cookies

These little gems from Spoonful of Sugar were delicious and the batch made enough to freeze for later (thank goodness it made so many what with a pound of butter and all).  Awesome.

Ingredients:
2 cups butter, softened
1/2 cup sugar
1 1/2 cups brown sugar
6.8 oz instant chocolate pudding mix
4 eggs
1 tsp vanilla
4 1/2 cups flour
2 tsp baking soda
1/2 tsp salt
3 cups semisweet chocolate chips

Directions:
Preheat your oven to 350°F. Line two cookie sheets with parchment paper.

With an electric mixer, cream the butter and sugars.  Beat in the pudding mix.  Add in the eggs and vanilla beat until well mixed.  Mix in the flour, baking soda, and salt. Then mix in the chocolate chips.  Drop a heaping tablespoonful of batter onto the cookie sheets for each cookie.

Bake for 10-12 minutes until the cookies are set in the middle.

Notes:  As you might have guessed, I used milk chocolate chips instead of semisweet.  By now you simply must know my husband's treat preferences.
