Pancakes
I love breakfast! So when the kids all wanted Breakfast for Dinner last night I was all for it. Kelly is a purist and requested the pancakes off the Bisquick box but I'm not a fan of Bisquick pancakes (no offense Bisquick...they are very nice to have in a pinch). So I went on AllRecipes.com and found this amazing recipe for pancakes. I loved it! And even Kelly, after getting over the fact that he smelled cinnamon in his pancakes, said they were good.
Ingredients:
2 cups all-purpose flour
2 tablespoons white sugar
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 3/4 cups milk
2 eggs
4 tablespoons vegetable oil
1 teaspoon cinnamon
1/2 teaspoon vanilla
Directions:
1. Preheat a lightly oiled griddle over medium-high heat.
2. Combine flour, sugar, baking powder, baking soda, cinnamon and salt. Make a well in the center. In a separate bowl, beat together egg, milk, vanilla and oil. Pour milk mixture into flour mixture. Beat until smooth.
3. Pour or scoop the batter onto the hot griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.
Notes: This recipe is for a double batch. I'll be honest, my family of 6 wouldn't have made it on one batch so I posted the double batch. We only had 2 small pancakes left over.
