Fettuccine Parmesan

Another goodie from the book Kids Cook!  Super easy and super delicious.  My family loved it – which means it gets an A+ from me (most of the time).  Don't try it unless you could stand to splurge a few calories.  I'm sure it's not "healthy" but when I tried it I couldn't stop eating it.  Not diet friendly!  It would also be delicious with some chicken.  Yum!

Ingredients:
1/2 lb. fresh spinach fettuccine or other pasta
2 Tbsp. butter
3 Tbsp. flour
2 cups milk
1/2 cup heavy cream
1/2 cup parmesan cheese
pepper

Directions:
Set a large pot of water on the stove to come to a boil while you prepare the sauce.

In a medium-sized saucepan, melt the butter and stir in the flour.  Cook for 1 minute over medium heat, while mixture begins to bubble slightly.

Very slowly, add the milk and heavy cream, stirring constantly with a wire whisk.  Continue stirring until mixture begins to bubble and thicken.  Stir in the parmesan cheese and continue to stir until it melts.  Season with pepper.  Lower heat to low setting.

Cook the pasta according to package directions.  Drain well.

Pour the sauce over the pasta and toss.

Serve immediately.
