STRAWBERRY JAM!
WASH, SLICE, AND MEASURE THREE CUPS OF STRAWBERRIES. PUT THEM IN A BIG PAN, BIGGER THAN A ROASTER, AND MASH WITH A POTATO MASHER. NOT TOO FINE OR THE JAM WILL BE SYRUPY.
TO MASHED STRAWBERRIES ADD 3 CUPS OF WATER, 3 PACKAGES OF STRAWBERRY KOOLAID, AND 1 PACKAGE OF MCP PECTIN. STIR AND BRING TO A ROLLING BOIL OVER MEDIUM HIGH HEAT. ADD 8 &1/2 CUPS OF SUGAR, CONTINUE TO STIR CONSTANTLY. WHEN IT COMES TO ANOTHER ROLLING BOIL, SET THE TIMER FOR FOUR MINUTES AND BOIL. SET THE PAN ASIDE, TAKE THE WHITE SKIM OFF OF THE TOP OF MIXTURE.
POUR THROUGH A FUNNEL INTO SCALDED BOTTLES AND SEAL TIGHT WITH LIDS THAT HAVE BEEN SETTING IN HOT WATER. EACH BATCH MADE ABOUT 10 BOTTLES. YUMMY, MY FAMILY INSISTS ON MAKING THIS EVERY YEAR. I HAVE A TENDANCY TO GIVE SOME AWAY AS WELL. THEY MAKE GREAT GIFTS. ENJOY.
