Zucchini Bread

I have never liked vegetables in what I deem a "dessert" (except for an occasional, well-made carrot cake). However, I am currently growing zucchini and squash in my garden and have no idea what I'm going to do with them when they are ready. My friend Jenna brought me some absolutely AMAZING zucchini bread the other day that I, along with little Shea, just devoured. I will be making the following in vats:

Ingredients:
3 eggs
2 cups sugar
1 cup oil
1 tsp. vanilla
3 cups flour
1 tsp. salt
1 tsp. baking soda
3 tsp. cinnamon
2 cups grated zucchini, unpeeled

Directions:
Mix together the eggs, sugar, oil, and vanilla. In a separate bowl, mix together the flour, salt, baking soda, and cinnamon. Mix the two bowls together and add the grated zucchini. Grease and flour 2 loaf pans. Cook at 325 for 1 hour or until done.

Optional:
You can mix in 1 cup of nuts or 1 cup of chocolate chips for variety.
