Peanut Butter Popcorn
This is delicious but I don't want to taste another bite (or smell it, for that matter) for at least a year. I just spent most of the day today making this recipe (5 batches, in fact) as teacher appreciation gifts for the Primary. I put a tag on each one that said, "Popcorn is a kernal that magnified its calling." Very cute but I'm all popcorn'ed out.
Ingredients:
2 bags Old-Fashioned microwave popcorn, popped
1/2 cup butter
3/4 cup brown sugar
20 large marshmallows
1 tsp. vanilla
1/2 cup peanut butter
Directions:
In the microwave, 1 minute at a time, melt butter, sugar, and marshmallows. Once this mixture is melted, stir in vanilla and peanut butter until completely incorporated. Place popped popcorn in a very large bowl and pour mixture over popcorn. With a large spoon, stir popcorn until well coated.
Preheat oven to 200 degrees. Line cookie sheet with parchment paper and transfer popcorn to cookie sheet. Bake in oven for 30 minutes, stirring every 10 minutes.
