15 Minute Taco in a Pan
This is a favorite, easy go-to meal that my mom and I use frequently. Who can't use a yummy 15 minute dinner?
1 lb. extra lean ground beef
2 cups water
1 pkg. taco seasoning or a couple of tbls if you buy it in bulk
2 cups minute white rice, uncooked (we substitute brown)
1 cup Mexican style shredded cheese
Chopped tomatoes, olives, avocado, green onions, lettuce (whatever!)
Brown meat in large skillet; drain
Add water and seasoning mix; stir. Bring to a boil
Stir in rice. Sprinkle with cheese; cover. Reduce heat to low; simmer 5 minutes. Top with fixin's. (our favs are green onion, tomatoes, avocado, and olives)
Tortilla chips or cornbread are nice on the side.
