White Chocolate, Pistachio, Cranberry Cookies

Here is my debut recipe for everyone. As I was making these, oh so easy, delights with my girls this evening I thought I should share it with everyone. First off, I must admit that I got the idea from one of my favorite programs "Quick fix meals with Robyn Miller" but you can change it up a million different ways. I find it very friendly to those of us who aren't "bakers"!

Start off with a package of store bought sugar cookie dough (of course you could substitute your favorite home made recipe in it's place if you wish!) Open up the package onto some parchment or other non-stick surface and add in about a 1/4 cup of dried cranberries, chopped Pistachios (I just put them in a zip lock and hit it with the rolling pin) and a 1/2 cup of White chocolate chips. Smoosh it around with your hands until it is evenly distributed. Next form it into a log about the diameter that you want your cookies to be and slice off about 1/2 inch slices and place on the pan. I flattened them out just a little bit to make sure they weren't too puffy in the middle after they were cooked. Bake at 375 degrees for 10-12 minutes.
Meanwhile melt another 1/2 cup of the White Chocolate chips in the microwave and spoon into a zip lock bag. Snip the end (pretty small) and pipe over the cookies for a very professional look.
There you go, cookies to die for in a flash!!

Now you could mix this up in as many ways as you could imagine, Died cherries, Macadamia nuts, dark chocolate. Let me know if you get adventurous!!
