Mamaw's Homemade Noodles
Noodles:
2 eggs beaten
2 cups sifted flour
2 tsp. salt
6TBS. milk
I just whipped this mixture up in my "new" Kitchen Aid. Awesome :) Thanks Grandmother Upchurch. Mix all of the ingredients together and then divide it into 4 parts. I use a pastry cloth which is indispensible, and flour it down. Then roll out one of the divided parts, thinly. I use a pizza cutter and cut noodles to the size desired. I like mine about 1/4". Continue and do the other dough as well. Then cover them with a cloth and let them dry. I turn mine over after about an hour.
In the meantime, I have cooked a whole chicken in the crockpot. I cook it on low for about 6 hours. I add a big can of chicken broth, poultry seasoning, celery salt, pepper, and bay leaves in with the chicken. Cook and let it cool so that the meat can be taken off of the bones.
Strain the chicken broth mixture and put it in a big pot. I add two more cans of chicken broth and some more of the spices listed above. Bring to a rolling boil, add noodles separately and let boil, stirring occasionally (hey have I heard that phrase before?) until done. My children love this recipe and of course, Mamaw has "turned it over," to me.............So girls get ready! I can hear the keys turning :)
