White Girl Enchiladas
Alright everyone. This really makes me nervous to do but Jerianne insisted. The other night I wanted to make enchaladas like my mom used to but I couldn't get a hold of her so I made them up myself and they tasted AMAZING! And it wasn't just me that thought so. So, bare with me, the measurements aren't exact so do it to taste and good luck!
I started by shredding cooked chicken, season to taste and then mixing the chicken with 1 can of cream of mushroom soup, a small carton of sour cream, about a cup of mexican shredded cheddar cheese, 3 spoonfuls of salsa and about half a pack of taco seasoning. Salt, Pepper and some oinion salt.
fill each tortilla with the above mixture and then place in baking dish. For the topping you want to mix a can of cream of chicken soup, a cup of water, a little more taco seasoning, about a cup of the taco shredded cheese and another couple of spoonfuls of salsa. Pour on top of wrapped tortillas and bake at 350 until warm and crispy. Which I found is close to an hour. So watch them.
I hope this doesn't confuse anyone, really they were very good but I probably wouldn't even be able to reproduce them either. Let me know if this works out for anyone. I think the real secret was the dry taco seasoning but who really knows! Good luck.
