LEMON GARLIC CHICKEN

This recipe got lost in my recipe collection. I came across it and tried it and now I am very sorry that it was lost. It is from Paul's sister, Judith, a good cook and a registered dietician. You do have to like garlic!
LEMON GARLIC CHICKEN

6 cloves fresh garlic, chopped
olive oil
flour
1 cup chicken broth
juice of 1 lemon
1-3 teaspoons sugar
3 or 4 or even 5 chicken breasts
salt and pepper to taste

Cut chicken breats in half, cover with saran wrap and pound with mallet. Saute garlic in oil and then remove with slotted spoon to bowl. Dredge chicken in flour, salt, and pepper and cook in the same pan; about 3 minutes each side or until browned. Add remaining ingredients to garlic and then pour over chicken and finish cooking. May garnish with lemon slices and capers (That's according to Judith-I personally don't ever HAVE capers!) Serve over rice.

I think that I'll try serving it over orzo. I'll let you know how that goes.

EXCELLENT!! I forgot my garlic at my mother's, so I only had one clove. I used it like the recipe called for and added garlic powder to the flour. We all thought it was great.
