Italian Chicken & Tomato Pasta Toss
This is an absolute family favorite - loved by my children, my husband, and myself. Plus, it's one of the easiest dishes. It's from the Kraft Foods magazine that I absolutely love receiving in the mail.
Ingredients:
3 cups medium curly egg noodles, uncooked
1 Tbsp. olive oil
1 lb. boneless, skinless chicken breasts, cut into 1 1/2 inch pieces
2 cups grape or cherry tomatoes halved
1/4 cup Balsamic Vinaigrette Dressing
3 cloves garlic, minced
1/2 cup chopped fresh basil
1/4 cup grated Parmesan cheese
Cook noodles as directed on package.
Meanwhile, heat oil in large nonstick skillet on medium-high heat. Add chicken; cook 6 minutes or until cooked through, stirring occasionally. Add tomatoes, dressing and garlic. Cook and stir 3 minutes or until heated through.
Drain pasta. Toss with chicken mixture and basil; sprinkle with cheese.
Makes 4 servings, 1 3/4 cups each.
Note: To make this dish even easier and faster, I sometimes use canned chicken breast because it cuts the time in half. Also, Kelly likes a bit more dressing than the 1/4 cup called for in this dish. I add a bit more and then he adds more once he gets it to the table. Our favorite Balsamic Vinaigrette is Briannas' Home Style The New American Creamy Balsamic Vinaigrette Dressing. I usually find it at WalMart or a local grocery chain store.
