Chocolate Raspberry Dessert
My family love the combination of raspberries and chocolate. I came up with this to satisfy the craving. It has turned into a favorite. A big plus-it is EASY!
Crush 1 pkg of Oreo cookies and combine with 1/2 cup melted butter.
Set aside 1 cup of the mixture (or more) to put on top.
Press the rest of the Oreo's into the bottom of a 9 x 13" pan.
Stir together 1 half gallon of vanilla ice cream (I use the cheap stuff)
and 2 cartons of Haagen Daz (sp?) Raspberry sorbet and spread on top of Oreos. Sprinkle on reserved crumbs and freeze.
SAUCE: (Thanks Emily!)
10 oz. frozen raspberries in syrup*
1/4 cup sugar
5 oz. semisweet chocolate cut into 1/2 inch pieces or the really good chocolate chips
2 Tbls. unsalted butter, softened
Thaw raspberries and then mash. In small saucepan bring sugar and berries to boil. Add chocolate and butter. Cook, stirring constantly, until melted.
Serve hot, or cool to room temperature and refrigerate.
Cut dessert into serving pieces and top with raspberry chocolate sauce and fresh raspberries if available.
*Sometimes I can't find raspberries in syrup so I use regular frozen raspberries and add a little water.
