Chinese Chicken Salad
My mother and I were just talking about this salad saying that we often forget about it, but when we make it, we always say to ourselves, "Why don't I make this more often?" Excuse me while I add it to my next week's menu.
4 chicken breasts, cooked and shredded
4 green onions, sliced thinly
1 small head lettuce, shredded
2 Tbsp. slivered almonds
2 Tbsp. sesame seeds, toasted (optional)
1/2 - 1 pkg. won ton skins, cut into 1 inch strips and fried in oil
Sweet and sour sauce:
3/4 c. vinegar
3/4 c. ketchup
3/4 c. water
1 1/2 c. sugar
3 tsp. soy sauce
3 Tbsp. cornstarch
6 Tbsp. water
Mix cornstarch and water (6 T) together. Combine all ingredients and simmer for a few minutes to thicken. Place won tons, lettuce, and then chicken on platter. Pour on sweet and sour sauce and sprinkle with green onions, almonds, and sesame seeds on top. Or, serve the sauce on the side.
