Chicken Cordon Bleu
It should be fairly obvious by now that I love my slow cooker. I think it began when I was working outside of my home full-time. I was always on the lookout for a quick and easy recipe that would be ready when we all got home. This one does require a little prep prior to the crockpot but it's really good and the drippings are great! Another family favorite.
Ingredients
3 whole boneless, skinless chicken breasts
3 large Swiss cheese slices, halved
3 large, thin ham slices, halved
2 Tbsp. butter
1 can cream of mushroom soup
3 Tbsp. milk
½ tsp. pepper
Cut whole breasts in half. Flatten each half with wooden mallet. Cover each half breast with half slice of cheese and ham. Roll up and secure with toothpicks. Brown each chicken roll in butter in skillet. Transfer to slow cooker.
Combine remaining ingredients. Pour over chicken, making sure chicken pieces are fully covered.
Cover. Cook on Low 4-5 hours.
Use the drippings in the bottom as gravy for either the chicken or mashed potatoes.
