Baked Potato Soup
This is one of my absolute favorites! I could probably eat this every day and I even enjoy the leftovers. Granted, it's not exactly on any calorie-conscious diet plan but it is worth every single bite! I rarely get a chance to make it because my kids hate it. I'm not sure why because it has plenty of things they like. Everyone else I have made it for loves it (including children).
Ingredients
4 large baked potatoes
2/3 cup butter
2/3 cup flour
6 cups milk, whole or 2%
¾ tsp. salt
½ tsp. pepper
4 green onions, chopped
12 slices bacon, fried and crumbled
2 cups shredded cheddar cheese
1 cup (8 oz.) sour cream
Cut potatoes in half. Scoop out pulp and put in small bowl.
Melt butter in large kettle. Add flour. Gradually stir in milk. Continue to stir until smooth, thickened, and bubbly.
Stir in potato pulp, salt, pepper, and three-quarters of the onions, bacon, and cheese. Cook until heated. Stir in sour cream.
Transfer to slow cooker set on Low. Top with remaining onions, bacon, and cheese. Take to a potluck, or serve on a buffet table, straight from the cooker.
Note: You can make this a bit healthier with fat-free sour cream and reduced fat cheese. However, do not use anything less than 2% milk. It won't work. Just ask Jacqui!
