Pumpkin Cake
This is actually Heather's recipe but I didn't know when she would get around to posting it and it's Fall and almost Thanksgiving and this recipe is perfect. As an added bonus, your house smells fantabulous while you are making it!
Ingredients:
2 c. pumpkin
4 eggs
1 c. oil
1 2/3 c. sugar
2 c. flour
1 tsp. baking soda
2 tsp. baking powder
1 tsp. salt
2 tsp. cinnamon
Frosting:
1/2 cube margarine
3 oz. cream cheese
2 c. powdered sugar
Directions:
Beat pumpkin, eggs, oil and sugar together then add dry ingredients. Grease and flour jelly roll pan. Bake for 23-28 minutes at 350. Cool and frost with cream cheese frosting.
