Minestrone Soup
1 diced onion
4 stalks diced celery
3 diced carrots
1 c. frozen green beans (may use 1 can)
1 c. frozen corn
2 garlic cloves, minced
3 cans chicken broth
1 can beans
14 oz. diced tomatoes
1 can tomato sauce
1 head shredded cabbage
1 tsp. oregano
1 tsp. basil
1/2 tsp. pepper
1 T. parsley
2 bay leaves
salt, if desired
macaroni noodles
Sautee onion, celery and carrots for 4 minutes. Add everything else and boil until noodles are tender. Serve with freshly grated parmesan.
