Candy Bar Parfaits
This is a recipe I've tweeked from a Pampered Chef one. There are SO many possiblities! (plus I liked finding a reason to pull out the parfait glasses I got from my wedding :)
1 bar milk chocolate candy, coarsely chopped (I used peanut butter cups)
1/3 cup chocolate-flavored syrup
2 T creamy peanut butter
1 cup mini-twist pretzels, coarsely chopped
1/4 cup peanuts, coarsely chopped (I omitted because I used the pb cups)
1 quart vanilla ice cream
4 clear drinking glasses (it layers better in glasses, but tastes just as good in a bowl)
Place candy bar in freezer for 5 minutes for easier chopping. Meanwhile, whisk together syrup and peanut butter and set aside.
Coarsely chop candy bar, pretzels and peanuts and combine in a small bowl.
To assemble parfaits, place 1 scoop ice cream in each of the 4 glasses or bowls. Top each with a fourth of the candy bar mixture and a second scoop of ice cream. Top with chocolate sauce and garnish with additional pretzels and peanuts, if desired. Enjoy!
