Cracker Barrel Hash Brown Casserole

This probably isn't the best dish if you are watching your wasteline (notice the stick of butter...)but if you go by the "all things in moderation" mantra, you could get away with it. However, they are well worth losing your grip on the diet for a brief moment. Very rich and very good! They go well as a barbecue side dish.

Ingredients:
1 (2 lb.) pkg. frozen Hash Browns
16 oz. Sour
can cream of chicken soup
1 stick butter
1/2 cup chopped onion
2 cups grated cheddar cheese

Directions:
Place potatoes in a greased 9x13" pan. Season with salt and pepper. Mince onions, add together sour cream, and cream of chicken soup. Pour over potatoes; sprinkle with Cheddar Cheese and butter, that you have cut into cubes. Bake at 350°F for 35 minutes.
