Oreo & Fudge Ice Cream Cake
As we look forward to warmer weather, I had to share a favorite that is also extremely easy. Again, it's something I found in the Kraft Foods magazine (today I planned about 2 weeks worth of dinners just from those magazines - a lot of new recipes that I will post if they work and are enjoyed).
Ingredients:
1/2 cup hot fudge ice cream topping, warmed
1 tub (8 oz.) Cool Whip whipped topping, thawed, divided
1 pkg. (4-serving size) Jello chocolate flavor instant pudding
8 Oreos, chopped (about 1 cup)
12 vanilla ice cream sandwiches, unwrapped
Pour fudge topping into medium bowl. Add 1 cup of the whipped topping; stir with wire whisk until well blended. Add dry pudding mix; stir 2 min. or until well blended. Gently stir in chopped cookies; set aside.
Arrange 4 of the ice cream sandwiches, side-by-side, on 24-inch-long piece of foil; top with half of the whipped topping mixture. Repeat layers. Top with remaining 4 ice cream sandwiches. Frost top and sides of dessert with remaining whipped topping. Bring up foil sides. Double fold top and ends to loosely seal packet.
Freeze at least 4 hours before serving. Store leftover dessert in freezer.
Possible Variation: I never mess with recipes. I'm not sure I have the confidence to do so. However, the other day I purchased Strawberry Milkshake Oreos and had an idea. You could buy Strawberry Ice Cream sandwiches and Strawberry Milkshake Oreos. Keep everything else the same and just add red food coloring to the Cool Whip on top. Then, you could garnish with strawberries and have Chocolate Covered Strawberry Ice Cream Cake. Just an idea and I haven't tried it but it sounds promising. If anyone tries that before me, let me know how it turns out!
