Carrot Cake
I am not usually a big fan of carrot cake in general. This one, however, is a major exception. It has been a long time favorite of mine. It's moist and healthyish and SUPER delicious (and no carrot shavings - save them for the green jello! giggle, giggle).
4 eggs
2 cups sugar
8 oz. plain yogurt
1/2 cup oil
2 cups flour
2 tsp baking soda
2 tsp salt
2 tsp cinnamon
3 jars carrot baby food
Beat eggs and sugar; add other ingredients in order - carrots last. Bake at 300 for 1 hour in a bundt pan.
Cream Cheese Frosting:
8 oz. low fat cream cheese
1/4 cup soft butter or magarine
1/2 tsp vanilla
1 cup powdered sugar
